If you like recipes with meat, you will love these bean and fillet sopes accompanied by tartar meat as they prepare it at the Museo Panteón Taurino restaurant.

INGREDIENTS

(For 4 people)

For the tartar:

  • 500 grams of ground beef
  • the juice of 8 lemons
  • 1 large onion finely chopped
  • 3 large tomatoes finely chopped
  • ½ cup cilantro, chopped
  • 4 serrano peppers, or to taste, finely chopped
  • ½ cup olive oil
  • Salt and pepper to taste

For the sopes:

  • ½ kilo of corn dough
  • Water as needed
  • Salt to taste
  • Corn oil for frying

For the filling:

  • 1 cup of refried beans
  • 300 grams of fillet tips fried in 2 tablespoons of corn oil and seasoned with salt and pepper to taste
  • ¾ cup sour cream
  • 150 grams of grated ranchero cheese

PREPARATION

The meat is soaked in the lemon juice for 30 minutes, the rest of the ingredients are added and everything is mixed very well.

Sopes:

The dough is prepared with water and salt and some fat tortillas of regular size (4 to 5 centimeters in diameter) are made; They are put on the comal and, halfway through cooking, a high border is made around them using the fingers. They are fried in a little oil and drained on absorbent paper. They are filled first with the beans and then with the fillet tips, bathed with the cream and sprinkled with the grated cheese.

PRESENTATION

The tartar is served in an oval or round platter accompanied by tortilla chips. Sopes are served as a snack accompanied by guacamole.
