Try this recipe and enjoy a rich tanned chicken with the flavor of herbs.

INGREDIENTS

(For 8 people)

  • 2 chickens cut into pieces
  • Salt and black pepper to taste
  • 3/4 of cup of olive oil
  • 2 medium onions, sliced ​​in feather
  • 4 cloves of garlic
  • 3 bay leaves
  • 4 sprigs of fresh oregano or 1 teaspoon of dried oregano
  • 3 sprigs fresh marjoram or 1/2 teaspoon dried
  • 6 black peppers
  • 2 cups of white wine vinegar
  • 3 cups of white wine

PREPARATION

The chicken is seasoned with salt and pepper. In a saucepan, heat the oil and fry the chicken pieces until golden brown; then they are removed from the oil and the onion and garlic are seasoned right there; the chicken is put back together with the herbs, peppers, vinegar, wine, salt and pepper. Leave it on the stove over low heat until the chicken is cooked (if necessary add a little water). It is removed from the fire and allowed to cool until gelatinous. It is served cold, accompanied with white rice.
