INGREDIENTS (FOR 10 TO 12 PEOPLE)

  • 1 kilo of tuna, sailfish or marlin fillets well washed, dried and cut into thin strips.
  • 1 large onion, chopped
  • 3 slices of ripe pineapple, diced.
  • Salt and pepper to taste.

For the marinade:

  • ½ achiote pill.
  • 2 cups of sour orange juice or 1½ cups of orange juice.
  • ½ cup of lemon juice.
  • 1 tablespoon of mustard.
  • ½ cup of oil.
  • ¼ cup of vinegar.

To accompany:

  • 30 medium tortillas.
  • Chopped cilantro.
  • Chopped onion.
  • Lemons divided into quarters.

PREPARATION

The oven is preheated to 175 ° C. In a baking tray, place the fish strips, add the onion, pineapple, salt and pepper to taste and bathe in the marinade. Put everything in the oven until the fish is cooked and the sauce is thick, about 30 minutes. It is served with hot tortillas, coriander, onion and lemons.

Dressing: All the ingredients are mixed.

PRESENTATION

In a clay plate with the tortillas in a tortilla holder and the rest of the ingredients in a small round plate.
