Follow this recipe to prepare a delicious acaapulqueño coconut alfajor, also known as cocada.

INGREDIENTS FOR 8 PEOPLE

To prepare the coconut sweet you will need to:

- 1 large coconut, peeled and finely grated
- 500 grams of sugar
- 1½ cups red coloring water

For the molds
Sweet almond oil or wafers

Preparation
The sugar is put with the water in a saucepan over the fire without stopping moving until it collapses, then it no longer moves and is left to simmer until it reaches a hard ball point. Care must be taken to clean the edges of the pan with a brush soaked in water so that the honey does not become sugary. It is about to be a hard ball when putting a little honey in a cup of cold water can form a ball between the thumb and forefinger or when the honey reaches a temperature of 118-120 ° C on the special sugar thermometer. Once this point is obtained, add the grated coconut and put it on the fire for five more minutes. The pasta is removed and divided into two parts, one is painted hot pink and the other is left white. In rectangular molds greased with sweet almond oil or if you prefer lined with wafers, put a layer of approximately 1½ centimeters of white paste and on this another layer of the same thickness of pink paste, let it cool and unmold.

Presentation
Serve the cocada in a patent leather accompanied by a serrated knife so that each diner takes the piece they want.
