We give you a recipe to prepare this delicious and nutritious typical Campeche fish.

INGREDIENTS

2 smedregal posts, three centimeters thick.

Flour.

Salt and pepper to taste.

Olive oil for frying.

Sauce: 1 medium red onion, chopped. 2 minced garlic cloves. 2 large xcatic chilies, deveined and coarsely chopped, 3 tablespoons olive oil, 3 large tomatoes, peeled and roughly chopped, 1 handful of chopped coriander, salt and pepper to taste. For 2 persons.

PREPARATION

The fish is washed very well, it is dried with absorbent paper, it is seasoned, it is passed through the flour shaking off the excess; They are fried in olive oil in a Teflon pan, taking care that they do not break, they are removed and kept hot.

Sauce: Season the onion, garlic and xcatic chilies in the hot oil, add the tomato, coriander, salt and pepper to taste and leave to season for six to eight minutes. It is served with the fish.

PRESENTATION

Individual dishes are salted with a little sauce, the fish is placed on it and bathed with the rest of the sauce.
