A fresh tuna medallion will always be a delicious dish. Try it with this recipe for tuna with black pepper!
INGREDIENTS
(For 1 person)
- 1 tuna medallion between 180 and 220 grams
- 1 garlic clove minced
- 4 tablespoons soy sauce
For the sauce:
- 1 finely chopped shallot or shallot
- ¼ cup demi-glace sauce (see Honey Garlic Duck recipe)
- ½ cup of red wine
- ¼ teaspoon dried tarragon
- 1 pinch of dried thyme
- 1 ½ teaspoons cracked black pepper
PREPARATION
The tuna is marinated with garlic and soy sauce for 5 minutes, and proceed as with tuna in coriander sauce. It is bathed with the sauce and served.
For the sauce:
The demi-glace sauce is reduced to half over low heat, with the shallot, the red wine, the tarragon, the thyme and the black pepper are added, it is left to thicken a little and it is served.
