Prepare this marinade recipe and enjoy some delicious pork legs.
INGREDIENTS
(For 8 people)
For the legs:
- 8 well cleaned pork legs and halved or quartered
- 1 onion stuck with four cloves
- ½ head of garlic
- 1 bay leaf
- 1 sprig of oregano
- salt to taste
For the pickle or pickled fruit:
- ½ cup of good olive oil
- 2 onions, thinly sliced
- 3 garlic cloves, peeled
- 3 carrots, peeled and sliced
- 4 jalapeno peppers
- 2 bay leaves
- 1 tablespoon dried oregano or four sprigs of fresh oregano
- 2 sprigs thyme
- 2 sprigs of marjoram
- 4 güeros peppers
- ¼ cup of good vinegar
PREPARATION
The legs are cooked with the onion, garlic, bay leaf, oregano, salt and water to cover until they are very soft and the water has been consumed at two cups to form the gelatin. They are removed from the heat, left to cool, boned (optional), placed on a platter, bathed with the gelatin and then with the marinade and served cold.
The pickle:
The onion, garlic cloves, carrot and jalapeño peppers are seasoned in the oil; Add the aromatic herbs, the güero chilies and salt to taste. Finally, add the vinegar and let it boil for two or three minutes.
PRESENTATION
They are served in a round or oval platter well bathed with their gelatin and the marinade. They should not be served very cold , it is better to serve them at the same time. If you wish, you can also garnish them with tomato, peeled and cut into quarters.
