La Hacienda de los Morales is one of the most famous restaurants in Mexico City. Here is the recipe for one of their desserts.
INGREDIENTS (FOR 10 PEOPLE)
- 5 ducks of 1,200 kg each.
- Salt and pepper to taste.
- 2 kilos of lard.
- 5 onions cut into pieces.
- 3 heads of garlic cut in half.
- 10 bay leaves.
- 4 sprigs of thyme.
For the sauce:
- 500 grams of sugar.
- 400 milliliters of orange liqueur (Curaçao or Controy.
- 2 cups of orange juice.
- The juice of 2 lemons.
- 1 1/2 tablespoons of white vinegar.
- 1 kilo of blackberries.
- 1 bar (90 grams) of butter.
- Salt to taste.
PREPARATION
Place the well cleaned ducks on a large baking sheet, season with salt and pepper, add the butter, onion, garlic, bay leaf and thyme; they are almost completely covered in water. They are baked at 180oC for 2 hours, turning them halfway through so that they brown on both sides.
The sauce: Put the sugar in a saucepan over medium heat, without stopping moving until a light golden caramel forms, carefully add the orange liqueur, removing the saucepan from the heat to prevent it from flaming; then the orange and lemon juices and the vinegar are added; Put the saucepan back on the fire and let the liquid reduce to a third, then add the blackberry, let it boil for about 10 minutes, strain, foam and reserve.
Once cooked, the ducks are removed from the tray and the water is drained; they are allowed to cool and carefully boned.
At the moment of serving, add a little butter to the hot sauce to give it some shine, the duck is salted and served.
