INGREDIENTS (FOR 8 TO 10 PEOPLE)
- 1 kilo of dried shrimp
- 4 or 5 eggs separated
- Corn oil or lard for frying
For the green sauce
- 1 bunch of sweet chili leaf
- 1 bunch of chipilín
- 1 bunch of chaya leaf
- 1 bunch of coriander
- 2 momo leaves (yerbasanta or acuyo)
- 6 or 8 young plantains, cooked with everything and peel, peeled and sliced
Preparation
The shrimp are peeled and the shells are brought to a boil. The yolks are ground with the peeled shrimp, the whites beaten to the point of nougat are added and mixed well. The pancakes are made by taking a little pasta with a spoon and putting them to fry in the hot oil. Then they are taken out, drained on absorbent paper and put into the sauce; bananas are added.
Green sauce
All the herbs are ground together with a little of the cooking water from the peels, strain and add the rest of the strained water. The rice is ground with a little water, it is strained very well and it is added to the sauce to make it thicken a little.
Presentation
They are served with white rice.
