Ingredients (Serves 6-8 people)

1 kilo of pork tenderloin very clean Salt, pepper and paprika to taste 1 bar of butter (90 grams) 1 tablespoon of corn oil 1 large onion, cut into small feathers 2 finely chopped garlic cloves 2 jalapeño or cuaresmeño peppers, deveined and cut into strips 100 grams of plum Raisin boneless and roughly chopped

PREPARATION

The loin is spread with salt, pepper and paprika and left to rest for at least two hours. Put the butter and oil to heat, add the loin and brown well on all sides; halfway through the browning, add the onion, garlic and chili so that they become fried, then the plums and a cup of hot water and salt to taste, and let it cook, taking care to cover it tightly until it is soft. It can be done in the pressure cooker.
