An iron-rich spinach recipe for those looking for vegetarian food ideas: spinach roll. Prepare it!

INGREDIENTS

(For 4 people)

  • 450 gr. spinach, rinsed and drained
  • Nutmeg
  • A piece of butter
  • 3 tablespoons of Parmesan cheese
  • 45 ml. thick fresh cream
  • A cream cheese with herbs or garlic or onion (these are included in the cheese)
  • Salt and pepper
  • 2 eggs
  • 1 red bell pepper

PREPARATION

1. Butter a cookie sheet. Preheat the oven 190 °.
2. Cook the spinach in a little water and let it drain well using a strainer and pressing the spinach with a spoon.
3. Mix the chopped spinach with the nutmeg, butter, Parmesan, cream and season. Let cool 5 minutes and add the yolks, then mix everything.
4. Bring the egg whites to the point of nougat and mix them delicately with the spinach. Cover the oven plate with parchment paper and spread the preparation evenly. Put it in the oven for 12 or 13 minutes.
5. After 12 min. Take out the preparation and let it cool for ½ hour.
6. At the same time put a saucepan with water and when it is boiling add the red pepper. Peel it and remove the seeds, then transfer it to the mixer or blender with the cream cheese.
7. Once the spinach is cold, spread it evenly with the cream / paprika.
8. Delicately roll the spinach on the longest side of the preparation and using the parchment paper. Serve on a bed of lettuce. It can be tasted hot or after a few hours in the refrigerator.
