INGREDIENTS (FOR 8 PEOPLE)
- 600 grams of dried beans.
- 1/2 cup of olive oil.
- 2 medium onions finely chopped.
- 2 cloves of garlic finely minced.
- 2 1/2 liters of chicken broth.
- 1 sprig of epazote.
- 8 large nopales sliced into strips, cooked and drained.
PREPARATION
From the day before the beans are soaked in cold water and drained. In a large pot, heat the oil, where the onion and garlic are seasoned, then the beans are added and fried for a few minutes; Add the chicken broth and epazote and cook over low heat until the beans are cooked. Finally, add the nopales, let everything boil a few more minutes and serve.
If you wish, you can accompany the broth with slices of fried bread.
